A one-pan meal that’s bursting with smoky chipotle flavor, this BBQ chicken and rice skillet is a comforting, easy-to-make dish. The combination of juicy chicken, rice, chipotle peppers, and melted cheddar cheese makes it a deliciously hearty meal.

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • 2 tbsp chipotle peppers in adobo, minced
  • 1 tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • ½ cup corn (optional)
  • ½ cup black beans (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  • Cook the chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and smoked paprika. Cook the chicken until browned and cooked through. Remove from the skillet and set aside.
  • Toast the rice: In the same skillet, add the rice and toast for 1-2 minutes, stirring frequently.
  • Cook the rice: Stir in chicken broth, BBQ sauce, and chipotle peppers. Bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
  • Add chicken and vegetables: Stir in the cooked chicken, corn, and black beans (if using). Mix to combine and heat everything through.
  • Melt the cheese: Sprinkle shredded cheddar cheese over the top of the rice and chicken. Cover the skillet and let the cheese melt for 2-3 minutes.
  • Serve: Garnish with chopped cilantro if desired. Serve hot and enjoy!
