S’mores Granola Bars

These S’mores Granola Bars combine gooey marshmallows, melty chocolate, and crunchy graham crackers in a chewy, no-bake bar that tastes just like the campfire favorite  no fire needed.

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup graham crackers, crushed
  • 1 ½ cups mini marshmallows
  • ¾ cup mini chocolate chips
  • ¼ cup unsalted butter
  • ⅓ cup honey
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. In a saucepan over medium heat, melt the butter, honey, and brown sugar until smooth and just bubbling. Remove from heat and stir in vanilla and salt.
  2. In a large bowl, mix oats, crushed graham crackers, 1 cup mini marshmallows, and chocolate chips.
  3. Pour the warm mixture over the dry ingredients and stir until well combined.
  4. Line an 8×8-inch baking pan with parchment paper. Press the mixture firmly and evenly into the pan.
  5. Top with remaining ½ cup marshmallows and toast under broiler for 1–2 minutes or with a kitchen torch until golden brown.
  6. Let cool completely, then refrigerate for 30 minutes before cutting into bars.

Notes

  • Use fresh marshmallows for the best gooey texture.
  • Chill before slicing for clean edges.
  • Store in an airtight container for up to 1 week or freeze for up to 2 months.
