- 2 cups old-fashioned oats
- 1 cup graham crackers, crushed
- 1 ½ cups mini marshmallows
- ¾ cup mini chocolate chips
- ¼ cup unsalted butter
- ⅓ cup honey
- ¼ cup brown sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- In a saucepan over medium heat, melt the butter, honey, and brown sugar until smooth and just bubbling. Remove from heat and stir in vanilla and salt.
- In a large bowl, mix oats, crushed graham crackers, 1 cup mini marshmallows, and chocolate chips.
- Pour the warm mixture over the dry ingredients and stir until well combined.
- Line an 8×8-inch baking pan with parchment paper. Press the mixture firmly and evenly into the pan.
- Top with remaining ½ cup marshmallows and toast under broiler for 1–2 minutes or with a kitchen torch until golden brown.
- Let cool completely, then refrigerate for 30 minutes before cutting into bars.
Notes
- Use fresh marshmallows for the best gooey texture.
- Chill before slicing for clean edges.
- Store in an airtight container for up to 1 week or freeze for up to 2 months.
