Instructions

  1. Preheat Your Equipment: Line a baking pan with parchment paper and set aside.
  2. Combine Ingredients: In a saucepan, combine honey, sugar, and water. Heat over medium until the sugar dissolves. Insert a candy thermometer and cook until the mixture reaches 240°F (115°C).
  3. Prepare Your Cooking Vessel: In a separate bowl, beat egg whites until stiff peaks form.
  4. Assemble the Dish: Once the sugar mixture reaches the correct temperature, pour it carefully into the beaten egg whites while continuously mixing. Continue mixing until the nougat is thick and glossy.
  5. Cook to Perfection: Stir in the toasted almonds and vanilla extract. Spread the nougat mixture into the prepared pan, smoothing it out with a spatula.
  6. Finishing Touches: Melt the dark chocolate and drizzle it over the top of the nougat. Allow the chocolate to set and harden.
