Instructions
- Preheat Your Equipment: Line a baking pan with parchment paper and set aside.
- Combine Ingredients: In a saucepan, combine honey, sugar, and water. Heat over medium until the sugar dissolves. Insert a candy thermometer and cook until the mixture reaches 240°F (115°C).
- Prepare Your Cooking Vessel: In a separate bowl, beat egg whites until stiff peaks form.
- Assemble the Dish: Once the sugar mixture reaches the correct temperature, pour it carefully into the beaten egg whites while continuously mixing. Continue mixing until the nougat is thick and glossy.
- Cook to Perfection: Stir in the toasted almonds and vanilla extract. Spread the nougat mixture into the prepared pan, smoothing it out with a spatula.
- Finishing Touches: Melt the dark chocolate and drizzle it over the top of the nougat. Allow the chocolate to set and harden.
