An authentic and comforting Mexican classic, Sopa de Fideo is a quick and easy noodle soup made with a rich tomato base, garlic, and broth. Perfect for any meal, it’s a dish loved by kids and adults alike.

For the Tomato Base:

  • 1 (28-ounce) can whole tomatoes (or 2 cups fresh Roma tomatoes, chopped)
  • ¼ cup olive oil
  • 2 cloves garlic
  • 1 tablespoon fresh Mexican oregano (or Mediterranean oregano), chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin

For the Soup:

  • 3 tablespoons olive oil
  • 1 (7-ounce) package cut fideo pasta
  • 1 quart chicken broth or vegetable broth
  • ⅓ cup chopped cilantro

Instructions

  • Make the Tomato Base:
    Combine the tomatoes, ¼ cup olive oil, garlic, oregano, salt, and cumin in a blender.
    Blend on high until smooth. Set aside.
  • Toast the Noodles:
    Heat the remaining 3 tablespoons of olive oil in a soup pot over medium heat.
    Add the fideo pasta and toast, stirring frequently, until golden and lightly browned, about 4 minutes.
  • Simmer the Soup:
    Add the blended tomato base to the toasted noodles and fry for 1-2 minutes.
    Pour in the chicken or vegetable broth and bring the mixture to a boil.
    Reduce heat to low, cover, and simmer for about 5 minutes, or until the pasta is tender.
  • Serve:
    Stir in the chopped cilantro and remove the soup from heat.
    Serve hot, optionally garnished with lime wedges, crumbled queso fresco, or diced avocado.

Notes

  • For a Vegan Option: Substitute chicken broth with vegetable broth.
  • To Make It Heartier: Add diced vegetables like carrots, peas, zucchini, or potatoes.
  • For a Spicy Kick: Stir in a teaspoon of arbol chili powder or a few splashes of hot sauce.
