Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together honey, olive oil, chili flakes, garlic powder, salt, and pepper until smooth.
  3. Place the baby carrots on the baking sheet and drizzle the honey mixture over them.
  4. Toss the carrots gently so they’re evenly coated, then spread them out in a single layer.
  5. Roast in the oven for 20 to 25 minutes, turning once halfway through, until the edges are golden and the carrots are tender.
  6. Sprinkle with chopped fresh herbs and a pinch of flaky salt if desired.
