Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together honey, olive oil, chili flakes, garlic powder, salt, and pepper until smooth.
- Place the baby carrots on the baking sheet and drizzle the honey mixture over them.
- Toss the carrots gently so they’re evenly coated, then spread them out in a single layer.
- Roast in the oven for 20 to 25 minutes, turning once halfway through, until the edges are golden and the carrots are tender.
- Sprinkle with chopped fresh herbs and a pinch of flaky salt if desired.
- Serve warm as a side dish or cool slightly to add to salads or grain bowls.
