Ingredients

  • 1/2 cup packed spinach, steamed, squeezed, drained, and chopped
  • 1 tbsp mixed herbs (mint, dill, and parsley), chopped
  • 1 green onion, sliced
  • 2 tbsp feta cheese, crumbled
  • 2 (8-inch) tortillas

 

  • 1 cup kasseri cheese (or mozzarella), shredded

Instructions

  • Prepare Filling: In a bowl, mix the spinach, herbs, green onions, and feta cheese.
  • Assemble Quesadilla: Heat a pan over medium heat. Place one tortilla in the pan and sprinkle half of the shredded cheese on top.
  • Add Filling: Evenly spread the spinach mixture over the cheese, then top with the remaining cheese. Cover with the second tortilla.
  • Cook Quesadilla: Cook until golden brown on one side, about 2-4 minutes. Flip carefully and cook the other side until the cheese is melted and both sides are crispy.

 

  • Serve: Slice into wedges and enjoy warm!

Notes

  • You can substitute kasseri cheese with mozzarella, gouda, or Monterey Jack for a milder taste.
  • To enhance the Mediterranean flavors, try adding a drizzle of olive oil before serving.

 

  • For extra crunch, use whole wheat tortillas or lightly brush the tortillas with butter or olive oil before cooking.
