These festive, green St. Patrick’s Day Crispy Treats are an easy and fun treat to make for the holiday! With the classic crispy rice cereal combined with sweet marshmallows, and a pop of green color, they’re perfect for celebrations. Decorate them with St. Patrick’s Day sprinkles for an extra touch of festive fun!

  • 1/4 cup unsalted butter
  • 10 oz mini marshmallows (about 6 cups)
  • 6 cups crispy rice cereal
  • 1/2 tsp vanilla extract
  • Green food coloring
  • St. Patrick’s Day sprinkles (optional)

Instructions

  • Melt the Butter and Marshmallows:
    • In a large saucepan, melt the butter over low heat.
    • Add the mini marshmallows, stirring constantly until fully melted and smooth.
    • Stir in the vanilla extract and a few drops of green food coloring until you achieve your desired shade of green.
  • Mix with Cereal:
    • Remove the saucepan from heat and gradually stir in the crispy rice cereal, ensuring all pieces are evenly coated with the green marshmallow mixture.
  • Shape the Treats:
    • Grease a 9×13-inch baking dish with butter or non-stick spray. Press the mixture evenly into the dish using a greased spatula or wax paper.
    • If desired, sprinkle St. Patrick’s Day sprinkles over the top and press lightly to adhere.
  • Cool and Cut:
    • Allow the treats to cool completely at room temperature, about 30 minutes.
    • Use a sharp knife to cut into squares or use shamrock-shaped cookie cutters for festive shapes.
