Celebrate St. Patrick’s Day with this festive and delicious poke cake! A fun green-colored cake topped with creamy whipped frosting and drizzled with green pudding. Perfect for your St. Paddy’s Day party!

Ingredients

Scale
  • 1 box of white cake mix (plus ingredients required for the mix: eggs, oil, water)
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 2 cups milk
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • Green food coloring (optional)
  • 12 tablespoons rainbow sprinkles (for decoration, optional)

Instructions

  • Prepare the Cake:
Bake the white cake mix according to package directions in a 9×13-inch baking dish. Allow it to cool for about 10-15 minutes.

  • Poke the Cake:
Once the cake is slightly cooled, use the handle of a wooden spoon or a fork to poke holes all over the cake, about 1 inch apart.

  • Prepare the Pudding:
In a medium bowl, whisk together the pistachio pudding mix and 2 cups of milk. Let the mixture sit for 5 minutes to thicken.

  • Add the Pudding to the Cake:
Pour the thickened pudding over the cooled cake, making sure to spread it into the holes. Allow the pudding to sink in, then refrigerate the cake for at least 2 hours or until fully set.

  • Top the Cake:
Spread whipped topping evenly over the pudding layer, smoothing it out with a spatula. If you want a fun green color, you can add a few drops of green food coloring to the whipped topping.

  • Decorate:
Optional: Garnish with rainbow sprinkles or any festive St. Patrick’s Day decorations.

  • Serve and Enjoy:
Slice the cake into squares and enjoy your festive St. Patrick’s Day treat!
