Ingredients

  • Make the Mashed Sweet Potatoes:
    • Preheat Oven: Preheat the oven to 350°F (175°C).
    • Prepare Sweet Potatoes: Wash and scrub the sweet potatoes under warm water, pat dry, and slice lengthwise in half.
    • Season and Roast: Line a baking sheet with parchment paper. Rub the cut sides of the sweet potatoes with olive oil, season with salt and black pepper, and place them cut-side down on the sheet.
    • Bake: Roast for about 30 minutes or until soft when poked with a fork.
    • Mash: Once slightly cooled, remove the skins, mash the flesh with 2 tablespoons of butter in a bowl, and set aside.
  • Prepare the Spinach Sauce:
    • Combine Ingredients: In a food processor, blend spinach, garlic, olive oil, balsamic vinegar, cumin, chili powder, and salt.
    • Blend: Process until smooth, about 3–5 minutes. Transfer the sauce to a medium bowl and set aside.
  • Cook the Steak:
    • Season: Rub both sides of the flank steak with chili powder, salt, black pepper, and 1 tablespoon of olive oil.
    • Heat Skillet: Heat a cast-iron skillet over medium heat for 3 minutes. Add 1 tablespoon of olive oil.
    • Cook Steak: Place the steak in the skillet and cook for 5 minutes on one side, then flip. Reduce heat to low-medium and cook another 5 minutes or until the desired doneness (130°F for medium-rare, 145°F for medium).
    • Rest and Slice: Remove the steak from the skillet, let rest for 5 minutes, then slice against the grain into 1-inch strips.
  • Reheat the Steak:
    • Reheat in Skillet: Return the sliced steak to the skillet with 1 tablespoon of olive oil. Heat for 1–2 minutes, coating the steak in the pan juices. Adjust seasoning as needed.
  • Assembly:
    • Plate: Divide the mashed sweet potatoes and steak among 4 plates.
    • Drizzle Sauce: Spoon the spinach sauce over the steak.
    • Garnish: Top the sweet potatoes with butter and black pepper. Garnish the steak with chopped cilantro or parsley.
