Ingredients

Scale

Dough Ingredients

  • 1 cup warm milk (lukewarm)
  • 2 ½ teaspoons active dry yeast
  • ¼ cup brown sugar
  • 4 tablespoons butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 ½ cups all-purpose flour

Filling Ingredients

  • ½ cup brown sugar
  • 2 tablespoons ground cinnamon
  • 3 tablespoons butter, melted

Sticky Glaze

  • 4 tablespoons butter
  • ½ cup brown sugar
  • 2 tablespoons light corn syrup (optional)

Instructions

  1. Prepare the Dough: Warm the milk until lukewarm, then stir in yeast and a pinch of sugar. Let it bloom for about 5 minutes until frothy. In a large bowl, mix flour, brown sugar, melted butter, eggs, and vanilla extract with the yeast mixture. Knead until the dough is smooth and elastic. Cover and let it rise in a warm place for about 1 hour or until doubled in size.
  2. Create the Sticky Filling: Combine brown sugar, cinnamon, and melted butter to form a sticky paste. This mixture will be spread evenly over the dough before rolling.
  3. Roll and Slice: On a floured surface, roll the dough into a large rectangle. Spread the cinnamon-sugar butter mixture evenly on top. Roll the dough tightly into a log, then slice into bite-sized pieces evenly.
  4. Arrange and Prepare for Baking: Grease a muffin tin or baking dish generously. Place each bun bite close together, but not squished. Prepare a caramel sauce by melting butter and brown sugar (optionally with corn syrup) and pour over the bun bites to create the sticky glaze.
  5. Bake to Perfection: Bake the sticky bun bites at 350°F (175°C) for 20-25 minutes until golden and bubbly. Remove from oven and let cool briefly to allow the glaze to set.

Notes

  • Always proof yeast in warm milk before mixing to ensure it’s active.
  • Use a sharp knife with gentle sawing for even bun slices and consistent baking.
  • Grease your baking dish thoroughly to prevent sticking and catch the glaze.
  • Monitor baking time carefully to keep buns soft and tender without drying them out.
  • Serve warm shortly after baking for the best gooey texture.
  • Variations include adding nuts, dried fruit, gluten-free flour substitutes, vegan ingredient swaps, or a maple syrup glaze instead of caramel.
