- 1 1/2 cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- 3/4 cup granulated sugar
- 16 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/3 cup strawberry jam or preserves
Instructions
- Preheat the oven to 325°F (160°C) and line an 8×8-inch pan with parchment paper.
- Mix graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool slightly.
- Beat cream cheese until smooth. Add remaining sugar, sour cream, vanilla, and eggs one at a time. Mix until just combined.
- Pour filling over crust. Drop spoonfuls of strawberry jam on top and swirl gently with a toothpick or skewer.
- Bake for 35–40 minutes until the center is just set. Turn off oven, crack the door, and let it cool for 30 minutes.
- Cool completely at room temperature, then chill in the fridge for at least 4 hours or overnight.
- Lift from the pan using parchment, slice into bars, and serve chilled.
