Strawberry Cheesecake Bars

Creamy strawberry cheesecake bars with a buttery graham cracker crust and a sweet strawberry swirl  a perfect handheld dessert for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 3/4 cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/3 cup strawberry jam or preserves

Instructions

  1. Preheat the oven to 325°F (160°C) and line an 8×8-inch pan with parchment paper.
  2. Mix graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool slightly.
  3. Beat cream cheese until smooth. Add remaining sugar, sour cream, vanilla, and eggs one at a time. Mix until just combined.
  4. Pour filling over crust. Drop spoonfuls of strawberry jam on top and swirl gently with a toothpick or skewer.
  5. Bake for 35–40 minutes until the center is just set. Turn off oven, crack the door, and let it cool for 30 minutes.
  6. Cool completely at room temperature, then chill in the fridge for at least 4 hours or overnight.
  7. Lift from the pan using parchment, slice into bars, and serve chilled.
