Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (30 g) confectioners’ sugar
  • 2 tbsp sour cream
  • 1/4 cup (60 ml) heavy cream, whipped to soft peaks
  • 1/2 tsp vanilla extract

For Assembly:

  • 4 waffle bowls
  • 1 cup (175 g) white chocolate chips, melted
  • 1 cup (120 g) strawberry shortcake crumbs (store-bought or homemade)
  • 1 cup (150 g) fresh strawberries, chopped + 4 halved strawberries for topping

Instructions

Prepare the Cheesecake Filling:

  1. Whip the Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese and confectioners’ sugar together until smooth and creamy. Add sour cream and vanilla extract, mixing until well combined.
  2. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until light and fluffy. Refrigerate until ready to assemble.

Prepare the Waffle Bowls:

  1. Coat with Chocolate: Melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each interval until smooth. Dip the rims of the waffle bowls into the melted chocolate, then into the strawberry shortcake crumbs to coat.
  2. Set Aside: Place the coated waffle bowls on parchment paper and let the chocolate set for about 10 minutes.

Assemble the Waffle Bowls:

  1. Fill the Waffle Bowls: Divide the cheesecake filling evenly among the prepared waffle bowls. Layer chopped strawberries over the filling.
  2. Top with Crumbs and Garnish: Sprinkle the tops with additional strawberry shortcake crumbs. Garnish each bowl with a halved strawberry for a decorative touch.

To Serve:

Enjoy these delicious strawberry shortcake cheesecake waffle bowls immediately, or refrigerate them for up to 2 hours before serving. Perfect for a sweet treat that looks as amazing as it tastes!

Notes

  • You can substitute the white chocolate with dark or milk chocolate if you prefer a different flavor.
  • For a homemade strawberry shortcake crumb, you can crush store-bought shortcake cookies or bake your own.
  • If you need to make this ahead of time, prepare everything up to the assembly step and refrigerate the cheesecake filling and chocolate-coated waffle bowls separately until you’re ready to assemble.
