  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened (or vegan butter for a dairy-free option)
  • 3/4 cup (150g) granulated sugar (plus extra for coating)
  • 1 large egg (or flax egg for a vegan option)
  • 1 tsp vanilla extract
  • 1/2 cup (75g) fresh or frozen strawberries, blended into a smooth puree
  • Red or pink food coloring (optional, for a brighter hue)

Instructions

  • Prepare the Strawberry Puree:
    Blend the fresh or thawed frozen strawberries in a blender or food processor until smooth. Strain the puree to remove seeds (optional). Set aside.
  • Mix the Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, and salt.
  • Make the Cookie Dough:
    In a large bowl, beat the softened butter and sugar together until light and fluffy.
    Add the egg (or flax egg), vanilla extract, and strawberry puree. Mix until combined.
    Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Add food coloring if you want a more vibrant pink color.
  • Chill the Dough:
    Cover the dough and refrigerate for at least 30 minutes to make it easier to handle.
  • Shape and Coat the Cookies:
    Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
    Roll the chilled dough into 1-inch balls. Roll each ball in granulated sugar to coat.
    Place the sugar-coated balls on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the Cookies:
    Bake for 10-12 minutes, or until the edges are set and the tops look slightly cracked. Avoid overbaking to keep the cookies soft.
    Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a vegan version, substitute the egg with a flax egg and use vegan butter.
