This easy homemade strawberry syrup is bursting with fresh strawberry flavor! Perfect for pancakes, waffles, ice cream, or even cocktails, it’s made with just 4 simple ingredients and comes together in under 30 minutes. A must-have for strawberry lovers!

Ingredients

  • 4 cups fresh strawberries, hulled and halved

  • 1 cup granulated sugar

  • 1 cup water

  • 1 teaspoon lemon juice

  • ½ teaspoon vanilla extract (optional, for extra flavor)

Instructions

Combine Ingredients:

  • In a large saucepan, mix the strawberries, sugar, and water. Stir well to combine.

2️⃣ Cook the Syrup:

  • Bring the mixture to a vigorous boil over medium-high heat.

  • Reduce heat to medium-low and let it simmer for 15-20 minutes, stirring occasionally, until the strawberries soften and the syrup turns a deep red color.

3️⃣ Mash & Strain:

  • Use a potato masher (or the back of a spoon) to gently mash the strawberries, releasing more juice.

  • Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl, pressing down to extract all the liquid. Discard the solids.

4️⃣ Final Touches:

  • Stir in the lemon juice and optional vanilla extract for extra depth of flavor.

5️⃣ Cool & Store:

 

  • Let the syrup cool to room temperature, then transfer it into a sterilized jar or bottle.

  • Store in the refrigerator for up to 2 weeks.

Serving Ideas: Drizzle over pancakes, waffles, yogurt, ice cream, or mix into lemonade & cocktails!
Storage Tip: Keep in a sealed jar in the fridge for up to 2 weeks.
Thicker Syrup? Simmer a bit longer for a richer consistency.
