  • 1 package sugar cookie dough (about 16 oz)
  • 1/2 cup fresh lemonade (or lemon juice and water mix)
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×9-inch baking dish with parchment paper.
  2. Press the sugar cookie dough into the bottom of the prepared baking dish to form an even layer. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and let cool while you prepare the lemonade filling.
  3. In a medium saucepan, combine the fresh lemonade, sugar, cornstarch, salt, and lemon zest. Stir over medium heat until the mixture thickens and becomes smooth, about 5 minutes. Remove from heat and let cool slightly.
  4. Spread the lemonade filling over the baked sugar cookie crust, smoothing it out evenly.
  5. For the crumble topping, combine the softened butter, flour, oats, brown sugar, vanilla extract, baking powder, and baking soda in a small bowl. Use your fingers or a fork to mix until it resembles coarse crumbs.
  6. Sprinkle the crumble topping over the lemonade filling, ensuring it’s evenly distributed.
  7. Bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is set.
  8. Remove from the oven and let cool to room temperature. Once cooled, cut into squares and dust with powdered sugar, if desired.
