- 2 cups cooked Jasmine rice
- 1 pound boneless chicken thighs, diced
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon honey
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 red bell pepper, sliced thin
- 1 cup snow peas
- 2 green onions, sliced
- 2 eggs
- 1 tablespoon sesame oil
Instructions
- Heat a large wok or skillet over medium-high heat until hot.
- In a small bowl, whisk together soy sauce, hoisin sauce, honey, and sesame oil.
- Add oil to the pan, then sauté garlic and ginger until fragrant, about 30 seconds.
- Add diced chicken and cook until browned and cooked through.
- Stir in bell pepper and snow peas. Cook for 2–3 minutes.
- Pour in sauce mixture and stir to coat everything evenly. Add rice and stir until heated through.
- In a separate pan, fry the eggs to your preference.
- Top stir-fry with fried eggs, garnish with green onions, and serve immediately.

- Use day-old rice for best texture.
