  • 2 cups cooked Jasmine rice
  • 1 pound boneless chicken thighs, diced
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 red bell pepper, sliced thin
  • 1 cup snow peas
  • 2 green onions, sliced
  • 2 eggs
  • 1 tablespoon sesame oil

Instructions

  1. Heat a large wok or skillet over medium-high heat until hot.
  2. In a small bowl, whisk together soy sauce, hoisin sauce, honey, and sesame oil.
  3. Add oil to the pan, then sauté garlic and ginger until fragrant, about 30 seconds.
  4. Add diced chicken and cook until browned and cooked through.
  5. Stir in bell pepper and snow peas. Cook for 2–3 minutes.
  6. Pour in sauce mixture and stir to coat everything evenly. Add rice and stir until heated through.
  7. In a separate pan, fry the eggs to your preference.
  8. Top stir-fry with fried eggs, garnish with green onions, and serve immediately.
