Cook Sweet Potatoes: Boil or steam sweet potatoes until fork-tender, then mash in a large bowl.,Mash Chickpeas: Roughly mash chickpeas and add to the mashed sweet potatoes.,Mix Patties: Stir in red onion, garlic, fresh herbs, spices, breadcrumbs, and egg. Mix well. The mixture should be firm enough to shape—add more breadcrumbs if too wet.,Form Patties: Shape the mixture into 8 small patties or 4 large patties.,Cook Patties: Heat olive oil in a nonstick skillet over medium heat. Cook patties for 3–4 minutes per side until golden and crisp.,Make Sauce: In a food processor or blender, blend all the avocado sauce ingredients until smooth.
