  • 1 ½ pounds ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon rice vinegar
  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 tablespoon green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C) and grease a loaf pan.
  • Mix the Ingredients:
    In a large mixing bowl, combine the ground beef, sesame oil, soy sauce, brown sugar, gochujang, garlic, ginger, rice vinegar, egg, and panko breadcrumbs.
  • Shape the Meatloaf:
    Mix everything together until well combined. Shape the mixture into a loaf and transfer it to the prepared loaf pan.
  • Bake:
    Bake for 40-45 minutes, or until the meatloaf is fully cooked through and browned on top.
  • Glaze:
    In the last 10 minutes of baking, brush a little extra gochujang and honey over the meatloaf for a sweet and spicy glaze.
  • Rest and Garnish:
    Once cooked, remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Adjust the amount of gochujang based on your spice preference. For a milder version, reduce the amount of gochujang.
  • You can also add a bit of honey to the glaze for extra sweetness.
  • Serve this meatloaf with steamed rice or vegetables to complete the meal.
