Taco Bell Mexican Pizza

Ingredients

  • 4 medium flour tortillas (about 8 inches each)
  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 1 cup refried beans
  • 1/2 cup red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 2 tablespoons sliced green onions
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 3 to 4 minutes until thickened.
  4. Lightly brush both sides of the tortillas with vegetable oil and bake for 4 to 5 minutes per side until lightly golden and crisp.
  5. Spread refried beans over one tortilla, layer with seasoned beef, and place a second tortilla on top.
  6. Spread red enchilada sauce over the top tortilla and sprinkle with cheddar and mozzarella cheese.
  7. Bake for 5 to 7 minutes until the cheese is melted and bubbly.
  8. Remove from oven, top with diced tomatoes and sliced green onions, slice, and serve warm.

Notes

  • Warm the refried beans before spreading for easier layering.
  • Let the pizza rest for 2 to 3 minutes before slicing for cleaner cuts.
  • Use freshly shredded cheese for the best melt and texture.
  • Reheat leftovers in the oven to maintain crispness.
