- 4 medium flour tortillas (about 8 inches each)
- 1 pound lean ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1 cup refried beans
- 1/2 cup red enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced tomatoes
- 2 tablespoons sliced green onions
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 3 to 4 minutes until thickened.
- Lightly brush both sides of the tortillas with vegetable oil and bake for 4 to 5 minutes per side until lightly golden and crisp.
- Spread refried beans over one tortilla, layer with seasoned beef, and place a second tortilla on top.
- Spread red enchilada sauce over the top tortilla and sprinkle with cheddar and mozzarella cheese.
- Bake for 5 to 7 minutes until the cheese is melted and bubbly.
- Remove from oven, top with diced tomatoes and sliced green onions, slice, and serve warm.
Notes
- Warm the refried beans before spreading for easier layering.
- Let the pizza rest for 2 to 3 minutes before slicing for cleaner cuts.
- Use freshly shredded cheese for the best melt and texture.
- Reheat leftovers in the oven to maintain crispness.
