  • 1 bag (16 oz) almonds
  • 1 bag (10 oz) cashews
  • 1 bag (6 oz) dried cranberries
  • ½ cup honey
  • 6 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1½ teaspoons cinnamon

Instructions

  1. Prepare the Coating: In a small saucepan, heat honey and coconut oil over medium heat until melted and combined. Stir in vanilla extract and cinnamon.
  2. Combine the Ingredients: In a large mixing bowl, combine the pecans, almonds, cashews, and dried cranberries. Pour the honey mixture over the nuts and cranberries, tossing to coat evenly.
  3. Bake the Snack Mix: Preheat the oven to 275°F (135°C). Spread the mixture evenly on a large baking sheet lined with parchment paper. Bake for 20–30 minutes, stirring every 10 minutes for even toasting.
  4. Cool and Serve: Remove the snack mix from the oven when it’s golden and fragrant (20–25 minutes for a softer texture, or 30 minutes for extra crunch). Let it cool completely before storing in an airtight container.
