These mint-infused cookies are the perfect treat for St. Patrick’s Day! With a light, buttery texture, a burst of mint flavor, and a sweet chocolate chip surprise, these cookies are rolled in powdered sugar for a sugary finish.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon mint extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • Green food coloring (optional)

 

  • 1 cup powdered sugar (for rolling)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the butter and powdered sugar until light and fluffy. Add vanilla and mint extract.
  • Gradually mix in flour and salt until combined. Add a few drops of green food coloring (optional) and stir in mini chocolate chips.
  • Roll dough into 1-inch balls and place on the prepared baking sheet.
  • Bake for 10-12 minutes, or until the bottoms are lightly golden.

 

  • Let cool slightly, then roll warm cookies in powdered sugar. Once completely cool, roll them again for an extra sugary coating.

Notes

  • The green food coloring is optional but adds a festive touch for St. Patrick’s Day.

 

  • For a more minty flavor, you can increase the mint extract by 1/4 teaspoon.
