A perfect recreation of Taco Bell’s famous Chili Cheese Burrito, this recipe features seasoned beef, melted cheddar cheese, and refried beans all wrapped in a warm flour tortilla. A satisfying, cheesy meal that will take you back to your favorite fast food memories!

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 tbsp chili powder
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 2 cups water
  • 2 tbsp cornstarch
  • 2 tbsp water (for cornstarch mixture)
  • 1 (16 oz) can refried beans
  • 1 (6 oz) can tomato paste (about 6 tbsp)
  • 3 cups shredded cheddar cheese
  • 10 (10-inch) flour tortillas

Instructions

  • Cook the Beef:
    Heat a large skillet over medium-high heat.
    Add the ground beef and diced onions. Cook until the beef is browned, breaking it apart as it cooks.
  • Drain and Season:
    Drain the excess fat from the skillet.
    Stir in the chili powder, cayenne pepper, and salt, ensuring the beef is well-coated with the spices.
  • Combine Ingredients:
    Add the tomato paste and refried beans to the beef mixture. Stir until well combined and smooth.
  • Thicken the Mixture:
    In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth.
    Add the cornstarch mixture to the skillet and cook for a few minutes until the mixture thickens.
  • Add Cheese:
    Fold in the shredded cheddar cheese, stirring until melted.
    Let the chili cheese mixture simmer for 10 minutes, stirring occasionally.
  • Prepare the Tortillas:
    Warm each tortilla by microwaving for 15 seconds or lightly dampening with water and heating on a skillet to make them soft and pliable.
  • Assemble the Burritos:
    Place a tortilla on a clean surface.
    Add shredded cheese to the center and top with ¼ to ½ cup of the beef and bean mixture.
    Fold in the sides of the tortilla and roll it into a burrito.
  • Serve:
    Repeat with the remaining tortillas and filling.

Notes

  • For extra flavor, you can top the burritos with more shredded cheese and microwave for 30 seconds to melt the cheese on top.
