Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk melted butter, sugar, eggs, espresso powder, and vanilla until smooth.
- In a separate bowl, mix flour, cocoa powder, and salt, then combine with wet ingredients until thick.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 25–30 minutes or until a toothpick inserted comes out with moist crumbs. Let cool completely.
- In another bowl, whip mascarpone, powdered sugar, and heavy cream until smooth and fluffy.
- Spread the mascarpone mixture over the cooled brownie base evenly.
- Dust generously with cocoa powder using a fine sieve.
- Chill for at least 2 hours, preferably overnight, then slice and serve.
