  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped vegetables (e.g., bell peppers, onions, mushrooms)
  • 1/2 cup beef pepperoni or cooked ground beef (optional)
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons unsalted butter, melted
  • Olive oil or nonstick spray (for cooking)

Instructions

  1. Prepare Your Fillings: Gather all your ingredients: pizza sauce, shredded cheese, vegetables, and optional meat. Preheat a large nonstick skillet or griddle over medium heat.
  2. Assemble the Pockets: Lay one tortilla flat. Spread about 2 tablespoons of pizza sauce on one half, leaving a border around the edge. Add mozzarella, veggies, and optional meat. Sprinkle with Italian seasoning. Fold the tortilla in half to form a semicircle.
  3. Seal and Butter: Lightly brush the outside of each folded tortilla with melted butter to help them crisp up and brown.
  4. Cook the Pockets: Place the pockets in the skillet and cook for 2–3 minutes per side until golden brown and crispy. Press gently with a spatula to ensure even cooking and melty insides.
  5. Serve and Enjoy: Slice each pocket in half and serve warm with extra pizza sauce for dipping!
