Tea Base

  • 4 cups water
  • 2 tablespoons Kashmiri/Himalayan green tea (or regular green tea)
  • 2 cups whole milk

Spices & Additives

  • 1/2 teaspoon baking soda
  • 12 star anise
  • 2 cardamom pods, crushed
  • 1 cinnamon stick
  • 1/4 teaspoon salt

For Serving

  • Sugar or honey to taste
  • Crushed almonds for garnish (optional)

Instructions

  • Bring the water to a boil in a saucepan, then add the green tea. Boil for about 5 minutes.
  • Stir in the baking soda. The water will turn deep red—this is the key step! Continue boiling for 2 minutes.
  • Add the star anise, crushed cardamom pods, and cinnamon stick. Boil for another minute.
  • Reduce the heat and simmer for 20-30 minutes, allowing the liquid to reduce by half. This intensifies both the flavor and color.
  • Stir in the salt, then add the milk. Bring to a boil while stirring constantly. The tea will gradually turn a beautiful pink color.
  • Strain the tea into cups, sweeten to taste with sugar or honey, and garnish with optional crushed almonds.
  • Serve hot and enjoy the warmth and comfort of this traditional chai.

Notes

  • If you prefer a stronger flavor, you can simmer the chai for a longer time before adding the milk.
  • The tea gets its pink color thanks to the addition of baking soda, which reacts with the tea’s natural pigments.
  • Crushed almonds are optional but add a lovely texture and nutty flavor to the chai.
