For the Grouper:

  • 4 grouper fillets (about 200g each)
  • Salt and pepper, to taste
  • Fresh coriander, chopped (for garnish)
  • Lime wedges, for serving

Instructions

  • Prepare the Sauce:
    • Heat the coconut oil in a medium saucepan over medium heat.
    • Add the minced ginger and garlic, sautéing until fragrant (about 1 minute).
    • Stir in the curry powder and cook for 30 seconds.
    • Pour in the coconut milk, stir well, and bring to a simmer.
    • Reduce the heat slightly and let the sauce simmer gently, stirring occasionally, until slightly thickened (about 5-7 minutes).
  • Cook the Grouper:
    • Season the grouper fillets generously with salt and pepper.
    • Heat a large skillet over medium-high heat and add a drizzle of coconut oil if needed.
    • Pan-fry the grouper fillets for 3-4 minutes on each side, or until golden brown and cooked through.
  • Combine and Simmer:
    • Gently transfer the cooked grouper fillets to the saucepan with the coconut-ginger sauce.
    • Spoon the sauce over the fillets to coat them thoroughly.
    • Simmer gently for 2-3 minutes to allow the flavors to meld.
  • Serve:
    • Garnish with freshly chopped coriander and a squeeze of lime juice.
    • Serve hot with steamed rice, naan bread, or your favorite side.
