For the Filling:

  • 1 cup fresh or frozen blueberries
  • 2 tbsp sugar
  • ½ tsp lemon zest
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar

For the Egg Rolls:

  • 8 egg roll wrappers
  • 1 egg (beaten, for sealing)
  • 1 cup vegetable oil (for frying)

For Topping:

  • ¼ cup powdered sugar (for dusting)
  • ½ cup whipped cream (for dipping)

Instructions

  • Make the Blueberry Filling:
    In a saucepan over medium heat, combine blueberries, sugar, lemon zest, and lemon juice. Cook for 3-4 minutes until the berries soften and release their juices. Let cool.

  • Prepare the Cream Cheese Mixture:
    In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the cooled blueberry mixture.

  • Assemble the Rolls:
    Place an egg roll wrapper on a flat surface. Spoon 2 tbsp of filling onto the lower third, fold in the sides, roll tightly, and seal the edge with beaten egg.

  • Fry Until Golden:
    Heat oil in a deep pan to 350°F (175°C). Fry egg rolls for 2-3 minutes per side until crispy and golden brown. Drain on paper towels.

Notes

  • You can use frozen blueberries, but fresh ones tend to provide a better texture.
  • For a lighter version, bake the rolls instead of frying them at 400°F (200°C) for about 15 minutes, flipping halfway through.
  • If you don’t like whipped cream, vanilla ice cream is also a great alternative for dipping.
