This Ultimate Ermine Frosting is light, fluffy, and buttery—perfect for cakes, cupcakes, or any baked treat! With a smooth texture and a rich, classic flavor, it’s an old-school frosting that never goes out of style.

Ingredients

  • 1 cup whole milk
  • 5 tbsp all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  • Cook Flour Mixture:
    In a saucepan, whisk together the whole milk and flour over medium heat until the mixture thickens like pudding. Remove from heat and cool completely.

  • Cream Butter & Sugar:
    Beat the butter and sugar together in a bowl until light and fluffy, about 3-5 minutes.

  • Combine:
    Add the cooled flour mixture, vanilla extract, and salt to the butter mixture. Beat on high speed until whipped and silky, about 5 more minutes.

  • Chill If Needed:
    If the frosting is too soft, refrigerate for 10-15 minutes to firm it up slightly before using.

  • Frost Your Cake or Cupcakes:
    Use the frosting immediately to decorate cakes, cupcakes, or any other baked goods.

Notes

  • Make sure the flour mixture is completely cooled before adding it to the butter and sugar, as it can cause the butter to melt if it’s too warm.
  • If you prefer a sweeter frosting, you can add a little more sugar to taste.
  • This frosting works wonderfully for layering cakes or piping onto cupcakes.
