These adorable Valentine’s Day Strawberry Cookies are soft, sweet, and bursting with flavor! Made with strawberry cake mix, a white chocolate drizzle, and festive sprinkles, these cookies are perfect for gifting or enjoying with loved ones.

Ingredients

Scale

For the Cookies:

  • 1 box (15.25 oz) strawberry cake mix
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup white chocolate chips (optional)
  • Red and pink sprinkles (optional)

For the White Chocolate Drizzle:

  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  • Prepare the Dough:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, combine the strawberry cake mix, softened butter, eggs, and vanilla extract. Mix until a thick dough forms. If desired, fold in the white chocolate chips.
  • Shape the Cookies:
Scoop about 1 ½ tablespoons of dough and roll into balls. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Gently press down on each ball to flatten slightly.
  • Bake the Cookies:
Bake for 9–11 minutes, or until the edges are set and the centers are slightly underbaked.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • Make the White Chocolate Drizzle:
In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring after each interval, until smooth.
  • Decorate the Cookies:
Using a spoon or piping bag, drizzle the melted white chocolate over the cooled cookies. Decorate with red and pink sprinkles while the chocolate drizzle is still wet.
  • Let the Cookies Set:
Allow the cookies to set at room temperature for 10–15 minutes, or chill in the refrigerator until the chocolate hardens.
  • Serve and Enjoy:
Serve these festive cookies at parties, share them as gifts, or enjoy them as a sweet treat for yourself!

Notes

  • You can omit the white chocolate chips in the dough if you prefer a lighter cookie.
  • Customize the sprinkles to match other holiday themes or use for any special occasion.
