For the Cookie Layer:

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup semi-sweet chocolate chips, divided

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 tbsp cocoa powder
  • 1/2 tsp vinegar
  • 1 tsp red food coloring
  • 1/4 cup semi-sweet chocolate chips

Instructions

  • Prepare the Cookie Layer:
    Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
    In a mixing bowl, cream together butter, brown sugar, and sugar until light and fluffy.
    Mix in the egg and vanilla extract.
    In another bowl, whisk together flour, baking soda, and salt.
    Gradually add dry ingredients to the wet mixture until combined.
    Fold in 1/2 cup of chocolate chips.
    Press 2/3 of the dough evenly into the prepared pan.
  • Make the Cheesecake Layer:
    In a medium bowl, beat the cream cheese and sugar until smooth.
    Add the egg, cocoa powder, vinegar, and red food coloring, and mix until combined.
    Gently fold in 1/4 cup chocolate chips.
    Spread the cheesecake mixture evenly over the cookie base.
  • Assemble & Bake:
    Crumble the remaining cookie dough on top of the cheesecake layer.
    Sprinkle with the remaining chocolate chips.
    Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
    Let cool completely before slicing into bars.
