  • For the Cupcakes:
    • 1 1/2 cups (190 g) all-purpose flour
    • 1 cup (200 g) granulated sugar
    • 1 tbsp unsweetened cocoa powder
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 large egg, room temperature
    • 1/2 cup (120 ml) vegetable oil
    • 1/2 cup (120 ml) buttermilk, room temperature
    • 1 tsp vanilla extract
    • 1 tsp white vinegar
    • 1 tbsp red food coloring
  • For the Cream Cheese Frosting:
    • 8 oz (225 g) cream cheese, softened
    • 1/2 cup (115 g) unsalted butter, softened
    • 4 cups (500 g) powdered sugar, sifted
    • 1 tsp vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • Prepare the Cupcake Batter:
    • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
    • In a separate bowl, whisk the egg, oil, buttermilk, vanilla extract, vinegar, and red food coloring until well combined.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Bake the Cupcakes:
    • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Make the Cream Cheese Frosting:
    • In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
    • Gradually add the powdered sugar, one cup at a time, beating on low speed.
    • Add the vanilla extract and increase the speed to medium, beating until light and fluffy.
  • Decorate the Cupcakes:
    • Once the cupcakes are completely cooled, pipe or spread the cream cheese frosting on top.
    • Garnish with festive Valentine’s Day sprinkles, mini heart-shaped candies, or edible glitter, if desired.

Notes

  • Make sure the cupcakes are completely cooled before frosting to avoid the frosting melting.
