Instructions
- In a small bowl, mix the softened cream cheese and granulated sugar until smooth and creamy.
- Stir in the vanilla extract and milk until fully combined.
- Add the all-purpose flour and baking powder, mixing well to remove any lumps.
- Fold in the rainbow sprinkles if using.
- Lightly grease a microwave-safe mug and pour the batter into it.
- Microwave on high for 60 to 90 seconds, until the cake is set but still slightly soft in the center.
- Let the mug cake rest for 1 minute before serving.
Notes
- Use a 10 to 12 ounce mug to prevent overflow.
- Do not overcook, the cake firms up as it rests.
- Serve warm or let it cool slightly for a firmer cheesecake texture.
