- 3 medium Overripe Bananas, mashed
- 1 ¾ cups Plant-Based Milk (like almond or oat milk)
- ¼ cup Maple Syrup
- 1 ½ teaspoons Ground Cinnamon
- 1 ½ teaspoons Baking Powder
- ¼ teaspoon Salt
- 1 teaspoon Vanilla Extract
- ½ cup Chopped Walnuts (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease or line an 8×8 baking dish.
- In a large bowl, mash the bananas. Add plant milk, maple syrup, vanilla, cinnamon, baking powder, and salt. Mix well.
- Add the oats and stir to combine. Let the mixture sit for 5 minutes.
- Pour the mixture into the prepared baking dish and spread evenly. Sprinkle with walnuts if using.
- Bake for 35–40 minutes until golden and the center is set.
- Let cool for 10 minutes before slicing and serving.

- Use overripe bananas for the best flavor and natural sweetness.
- Add chocolate chips, berries, or seeds for extra variety.
- Store leftovers in the fridge for up to 5 days or freeze for 2 months.
