Vegan Pasta Salad

A vibrant and creamy vegan pasta salad loaded with rotini pasta, sweet corn, fresh vegetables, and a bright lemon dressing. Perfect for picnics, meal prep, or a quick refreshing side dish.

Ingredients

  • 12 oz rotini pasta
  • 1 cup sweet corn kernels
  • 1 cup green peas
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup vegan mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the rotini pasta according to package directions until tender.
  3. Drain the pasta and rinse lightly with cool water to stop cooking.
  4. In a small bowl mix vegan mayonnaise, lemon juice, olive oil, garlic powder, salt, and pepper until smooth.
  5. In a large bowl combine the cooked pasta, corn, peas, diced red bell pepper, red onion, and parsley.
  6. Pour the dressing over the pasta mixture.
  7. Gently mix until everything is evenly coated.
  8. Chill for about 30 minutes before serving for the best flavor.

Notes

  • Cook pasta slightly firm so it holds shape in the salad.
  • Chill the salad before serving so the flavors blend well.
  • If the salad becomes dry, mix in a small spoon of vegan mayonnaise.
