- 12 oz rotini pasta
- 1 cup sweet corn kernels
- 1 cup green peas
- 1 medium red bell pepper, diced
- 1/4 cup red onion, finely diced
- 1/2 cup vegan mayonnaise
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Cook the rotini pasta according to package directions until tender.
- Drain the pasta and rinse lightly with cool water to stop cooking.
- In a small bowl mix vegan mayonnaise, lemon juice, olive oil, garlic powder, salt, and pepper until smooth.
- In a large bowl combine the cooked pasta, corn, peas, diced red bell pepper, red onion, and parsley.
- Pour the dressing over the pasta mixture.
- Gently mix until everything is evenly coated.
- Chill for about 30 minutes before serving for the best flavor.
Notes
- Cook pasta slightly firm so it holds shape in the salad.
- Chill the salad before serving so the flavors blend well.
- If the salad becomes dry, mix in a small spoon of vegan mayonnaise.
