Ingredients

  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. Chill the watermelon and cucumber in the fridge before starting.
  2. In a large bowl, combine cubed watermelon, cucumber slices, red onion, and mint leaves.
  3. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Top with crumbled feta cheese just before serving.
  6. Serve immediately and enjoy.
