Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken pieces and cook for 5–6 minutes, stirring occasionally, until cooked through. Transfer chicken to a plate and set aside.
  2. In the same pot, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
  3. Sprinkle flour over the butter and garlic mixture, stirring constantly to form a roux. Cook for 1–2 minutes until the mixture thickens.
  4. Gradually whisk in chicken broth and half-and-half, ensuring no lumps remain. Bring the mixture to a boil.
  5. Stir in salt, pepper, onion powder, garlic powder, and Italian seasoning. Reduce heat and simmer for 10 minutes, allowing the flavors to meld.
  6. Add cream cheese and Parmesan cheese to the pot, stirring until melted and the soup becomes creamy.
  7. Return the cooked chicken and lasagna noodles to the pot. Stir to combine and heat through.
  8. Serve the soup hot, garnished with chopped fresh thyme or parsley.
