For the Cake:

  • 1 box (15.25 oz) white cake mix
  • Ingredients required by the cake mix (usually eggs, oil, water)
  • 1 cup sweetened shredded coconut
  • ½ cup chopped pecans

For the Frosting:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  • Preheat the Oven:

    • Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking pan.
  • Prepare the Cheesecake Filling:

    • In a mixing bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth.
    • Add eggs, one at a time, mixing well after each addition. Stir in sour cream until fully combined. Set aside.
  • Prepare the Cake Batter:

    • Prepare the cake mix according to the package instructions.
    • Fold in the shredded coconut and chopped pecans into the cake batter.
  • Assemble the Cake:

    • Pour half of the cake batter into the prepared pan, spreading it evenly.
    • Gently spread the cheesecake filling over the cake batter.
    • Top with the remaining cake batter, spreading it evenly over the cheesecake layer.
  • Bake the Cake:

    • Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely in the pan.
  • Prepare the Frosting:

    • In a saucepan over medium heat, combine evaporated milk, sugar, egg yolks, and butter. Stir constantly until the mixture thickens, about 10 minutes.
    • Remove from heat and stir in vanilla extract, shredded coconut, and chopped pecans.
  • Frost the Cake:

    • Once the cake has cooled completely, spread the frosting evenly over the top.
    • Let the frosting set before slicing and serving.

Notes

  • Be sure to let the cake cool completely before frosting to ensure the frosting sets properly.
  • If you prefer a thicker cheesecake layer, you can double the ingredients for the cheesecake filling.
