This vibrant Wild Garlic Macaroni Cheese offers a fresh twist on a classic comfort dish. Featuring a creamy, bright green cheese sauce made with wild garlic and spinach, it’s a seasonal delight perfect for cozy dinners or special occasions.

For the Wild Garlic Mac and Cheese:

  • 200g macaroni pasta
  • 50g butter
  • 25g plain flour
  • 500g milk
  • 50g Parmesan, finely grated
  • 100g mature cheddar, finely grated (reserve some for topping)
  • 1 tsp Dijon mustard
  • 100g spinach
  • 1 handful wild garlic, washed, dried, and roughly chopped
  • 1 dash white wine vinegar
  • Salt, to taste

  • Blender
  • Ovenproof dish

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the macaroni and cook for 6–8 minutes, or according to the packet instructions, until al dente.
    • Drain and set aside.
  • Make the Cheese Sauce:
    • In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 5 minutes, stirring constantly, to make a roux.
    • Gradually whisk in the milk, a little at a time, until you have a smooth sauce.
    • Add the Parmesan and cheddar (reserving some for topping) and stir until melted and fully combined.
    • Stir in the Dijon mustard.
  • Add the Greens:
    • Add the spinach and wild garlic to the sauce and stir until wilted.
    • Transfer the mixture to a blender and blend until smooth and vibrant green.
    • Season with salt to taste and a splash of white wine vinegar.
  • Preheat the Oven:
    • Preheat the oven to 180ºC (gas mark 4).
  • Assemble and Bake:
    • Mix the cheese sauce with the cooked pasta and transfer to an ovenproof dish.
    • Sprinkle the reserved cheddar over the top.
    • Bake in the preheated oven for 15–20 minutes, or until golden and bubbling.

Notes

You can add a sprinkle of breadcrumbs on top for an extra crispy crust. The wild garlic can be substituted with garlic chives if needed, depending on availability.
