These Yellow Squash Tots are a healthy, cheesy snack that are crispy on the outside and tender on the inside. Packed with veggies and perfect for dipping, they are a fun twist on the classic tater tot!

Ingredients

  • 3 small yellow squash (about 11.5 lbs) squash
  • 1 egg 🥚
  • 4 oz grated cheddar cheese (about ½ cup) 🧀
  • ¾ cup breadcrumbs 🍞
  • ½ medium onion, finely chopped 🧅
  • ½ teaspoon garlic powder 🧄
  • ½ teaspoon salt 🧂
  • Ground black pepper to taste ⚫
  • Optional: 2 tablespoons – ¼ cup finely minced parsley 🌿
  • ⅓ cup unsweetened Greek yogurt 🍦
  • 2 tsp lemon juice (from about ½ lemon) 🍋
  • 1 tsp finely minced parsley (or dill) 🌿
  • ¼ tsp garlic powder (or 1 small clove garlic, minced) 🧄
  • ¼ tsp salt 🧂
  • ¼ tsp pepper ⚫

Instructions

  1. Preheat oven to 400°F 🔥. Line a baking sheet with parchment paper or grease with olive oil.
  2. Grate the squash on a fine grater. Add ½ teaspoon salt and mix. Put in a colander and let sit while preparing other ingredients ⏳.
  3. Squeeze all excess liquid from the grated squash. Discard the liquid 💦.
  4. Combine all tot ingredients in a bowl and mix well. Mixture should be sticky. Add more breadcrumbs if too wet 🥣. Form small tots (about 1.5-2 tablespoons each)🖐️. Dip hands in cold water to prevent sticking.
  5. Arrange tots on baking sheet. Bake for 25 minutes, or until golden brown 🌟. Let rest 5 minutes before removing.
  6. While tots bake, combine yogurt sauce ingredients in a small bowl 🥣.
  7. Serve tots warm with yogurt sauce!

Notes

  • For a crispier texture, flip the tots halfway through the baking time.
  • You can substitute breadcrumbs with panko breadcrumbs for extra crunch.
  • These tots are best served fresh, but you can store them in the fridge for up to 3 days and reheat in the oven.
