  • 3/4 cup granulated sugar
  • 1 large egg
  • Zest of one medium lemon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour

For the Lemon Glaze:

  • 2 cups confectioners’ sugar
  • 3 tablespoons fresh lemon juice

Instructions

  1. Prepare the Dough:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
    Beat in the egg and lemon zest, mixing well.
    Add the baking powder and salt, then gradually incorporate the flour. Mix until a soft dough forms.
  2. Shape and Bake:
    Scoop out 1 tablespoon of dough at a time, rolling it into a ball.
    Place the dough balls on the prepared baking sheet, leaving space between each.
    Bake for 10–12 minutes, or until the edges are set but not browned.
    Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  3. Make the Lemon Glaze:
    In a small bowl, whisk together the confectioners’ sugar and fresh lemon juice until smooth.
  4. Glaze the Cookies:
    Once the cookies have cooled completely, dip the tops into the lemon glaze or drizzle it over the cookies.
    Let the glaze set for about 15 minutes before serving.
