These baked chocolate donuts are a perfect blend of rich cocoa and a touch of fruity elegance, thanks to the freeze-dried raspberries. Coated in a smooth chocolate glaze, they make a decadent treat for Valentine’s Day or any sweet occasion!

For the Donuts:

  • 1 cup (125g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/2 cup (100g) granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk (or plant-based milk for dairy-free)
  • 1 large egg (or flax egg for vegan option)
  • 2 tbsp (30g) unsalted butter, melted (or coconut oil)
  • 1 tsp vanilla extract

For the Chocolate Glaze:

  • 1/2 cup (85g) semi-sweet chocolate chips (or vegan chocolate)
  • 2 tbsp (30ml) heavy cream (or coconut cream)
  • 1/2 tsp vanilla extract

For the Topping:

  • 1/4 cup (15g) freeze-dried raspberries, crushed

Instructions

  • Prepare the Donut Batter:
    • Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick spray or butter.
    • In a medium bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  • Bake the Donuts:
    • Spoon the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the donut pan, filling each cavity about 3/4 full.
    • Bake for 10-12 minutes, or until the donuts spring back when gently pressed.
    • Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Chocolate Glaze:
    • In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 15-second intervals, stirring between each, until smooth and glossy. Stir in the vanilla extract.
  • Glaze the Donuts:
    • Dip the tops of the cooled donuts into the chocolate glaze, letting any excess drip off.
  • Add the Raspberry Topping:
    • While the glaze is still wet, sprinkle the crushed freeze-dried raspberries over the top of each donut for a pop of color and flavor.
  • Serve and Enjoy:
    • Let the glaze set for a few minutes before serving.
