Cajun Salmon Pasta

Ingredients

  • 4 salmon fillets, about 6 ounces each, skin removed
  • 12 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and heat a large skillet over medium-high heat.
  2. Season the salmon fillets with Cajun seasoning, smoked paprika, salt, and black pepper.
  3. Add olive oil to the skillet and sear the salmon for 4 to 5 minutes per side until golden and cooked through. Remove and set aside.
  4. Cook the fettuccine according to package instructions until al dente.
  5. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  6. Pour in heavy cream and stir in parmesan cheese until smooth and creamy.
  7. Add the cooked pasta to the sauce and toss until fully coated.
  8. Flake the salmon into large pieces and gently fold it into the pasta.
  9. Sprinkle chopped parsley and extra parmesan on top before serving warm.

Notes

  • Reserve some pasta water to loosen the sauce if needed.
  • Freshly grated parmesan melts smoother than pre-shredded cheese.
  • Do not overcook the salmon to keep it tender and flaky.
  • Add cayenne pepper if you prefer extra heat.
