- 12 ounces linguine
- 2 salmon fillets, about 12 ounces total
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 3/4 cup freshly grated parmesan cheese
- 3 tablespoons capers, drained
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve 1/2 cup pasta water before draining.
- Pat the salmon dry and season lightly with salt and pepper.
- Heat olive oil in a deep skillet over medium heat. Cook salmon for about 4 minutes per side until flaky and cooked through. Remove and break into chunks.
- In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
- Pour in heavy cream and stir gently. Add parmesan cheese, lemon juice, and capers.
- Add cooked linguine and reserved pasta water. Toss until the sauce coats the pasta smoothly.
- Fold the salmon chunks back into the pasta carefully.
- Sprinkle with fresh dill and extra black pepper before serving.
Notes
- Freshly grated parmesan melts more smoothly into the sauce.
- Add extra pasta water if the sauce becomes too thick.
- Fresh dill gives the brightest flavor for this dish.
- Reheat leftovers gently with a splash of cream or broth.
