CARAMEL COOKIE ICE CREAM SANDWICHES

Ingredients

  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups vanilla ice cream
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix flour, cocoa powder, baking soda, and salt in a bowl.
  3. Cream butter and sugars, then add eggs and vanilla.
  4. Combine wet and dry ingredients until dough forms.
  5. Scoop dough onto baking sheet and bake for 10 minutes.
  6. Cool cookies completely.
  7. Scoop ice cream onto one cookie and top with another.
  8. Freeze sandwiches until firm.
  9. Drizzle caramel sauce before serving.

Notes

  • Let ice cream soften slightly before assembling.
  • Do not overbake cookies to keep them soft.
