- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups vanilla ice cream
- 1/2 cup caramel sauce
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Mix flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter and sugars, then add eggs and vanilla.
- Combine wet and dry ingredients until dough forms.
- Scoop dough onto baking sheet and bake for 10 minutes.
- Cool cookies completely.
- Scoop ice cream onto one cookie and top with another.
- Freeze sandwiches until firm.
- Drizzle caramel sauce before serving.
Notes
- Let ice cream soften slightly before assembling.
- Do not overbake cookies to keep them soft.
- Freeze at least 1 hour before serving.
