This light and fluffy Carrot Soufflé is a delicious twist on the classic carrot dish. With a delicate sweetness and rich flavor, it’s perfect for holiday meals, family dinners, or any occasion that calls for a special side dish. A must-try for carrot lovers!

  • 4 cups cooked and mashed carrots (about 56 medium carrots)
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese (optional, for topping)

Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish or soufflé dish.

  • Prepare the Carrots:
    Cook and mash the carrots until smooth (you can steam or boil the carrots until fork-tender and then mash).

  • Mix the Ingredients:
    In a large bowl, combine the mashed carrots, melted butter, sugar, vanilla, cinnamon, and nutmeg. Stir until the mixture is smooth.

  • Add Eggs & Dry Ingredients:
    Stir in the beaten eggs, flour, baking powder, and milk. Mix until fully incorporated.

  • Bake:
    Pour the carrot mixture into the prepared baking dish. If desired, sprinkle the top with grated Parmesan cheese for added flavor.

  • Bake & Serve:
    Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

  • Serve Warm:
    Let the soufflé sit for a few minutes before serving. Serve warm as a side dish for your holiday meals or any special dinner!
