Cheddar Egg Bites

Soft, fluffy cheddar egg bites packed with cheese and vegetables, perfect for quick breakfasts or meal prep.

Ingredients

  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup diced red bell pepper
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and grease a muffin tin.
  2. Whisk eggs, milk, salt, and pepper until smooth.
  3. Add diced peppers and green onions into each mold.
  4. Pour egg mixture evenly and top with cheese.
  5. Bake for 18 to 22 minutes until set.
  6. Cool slightly before removing.
  7. Serve warm.

Notes

  • Do not overbake to keep them soft.
  • Use silicone molds for easier removal.
  • Store in fridge for up to 4 days.
