- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup milk
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F and grease a muffin tin.
- Whisk eggs, milk, salt, and pepper until smooth.
- Add diced peppers and green onions into each mold.
- Pour egg mixture evenly and top with cheese.
- Bake for 18 to 22 minutes until set.
- Cool slightly before removing.
- Serve warm.
Notes
- Do not overbake to keep them soft.
- Use silicone molds for easier removal.
- Store in fridge for up to 4 days.
