These Chewy Sugar Cookies are soft, buttery, and full of classic vanilla flavor. Rolled in sugar for a slightly crispy exterior and soft center, they’re the perfect treat for any occasion. Ingredients

For the Cookies:
✔️ 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
✔️ 1/2 tsp baking powder
✔️ 1/2 tsp baking soda
✔️ 1/2 tsp salt
✔️ 1 cup (200 g) granulated white sugar
✔️ 1 cup (227 g) unsalted butter, very softened
✔️ 1 egg, at room temperature
✔️ 2 tsp vanilla
✔️ 1/4 cup (50 g) granulated white sugar, for rolling dough

Instructions

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream the butter and sugar: In a large bowl, cream the very softened butter and granulated sugar with an electric mixer on high speed for 1-2 minutes, until light and fluffy.
  • Add the egg and vanilla: Add the egg and vanilla and mix on medium speed until pale and fluffy, about 1-2 minutes.
  • Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined.
  • Shape the cookies: Scoop out dough using a 2 tbsp cookie scoop, roll into balls, and coat them in sugar.
  • Bake the cookies: Place the dough balls at least 2 inches apart on the baking sheets. Slightly flatten each ball to form a circle. Bake 6-8 cookies at a time.
  • Bake for 9-10 minutes or until the edges are golden. Let them cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to finish cooling.
  • Serve and enjoy!

Notes

  • Make sure the butter is very softened to ensure the perfect texture.
  • Roll the dough balls in sugar for a nice, crispy exterior.
  • For thicker cookies, you can chill the dough for 30 minutes before baking.
