Ingredients

Scale
  • For the Pie Crust:
    • 2 1/2 cups all-purpose flour
    • 1 cup unsalted butter, cold and cubed
    • 1/4 cup granulated sugar
    • 1/2 teaspoon salt
    • 68 tablespoons ice water
  • For the Pie Filling:
    • 1/2 cup unsalted butter, melted
    • 1 cup light brown sugar, packed
    • 1/2 cup corn syrup
    • 1/4 teaspoon salt
    • 2 large eggs, lightly beaten
    • 1 teaspoon pure vanilla extract
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Prepare the Pie Crust:
    • In a large bowl, whisk together the flour, sugar, and salt.
    • Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
    • Divide the dough into 2 balls, flatten each into a round disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat and Roll Out the Dough:
    • Preheat your oven to 350°F (175°C).
    • On a lightly floured surface, roll out one dough round to fit a 9-inch pie plate. Gently transfer it to the pie plate, pressing it into the edges and trimming any overhang. Reserve the second round for another use or freeze for later.
  • Make the Pie Filling:
    • In a medium bowl, whisk together the melted butter, brown sugar, corn syrup, and salt.
    • Add the beaten eggs and vanilla extract, stirring until smooth.
    • Fold in the chocolate chips and nuts (if using).
  • Assemble the Pie:
    • Pour the filling into the prepared pie crust, spreading it evenly.
  • Bake the Pie:
    • Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
    • If the edges of the crust brown too quickly, cover them with aluminum foil.
  • Cool and Serve:
    • Allow the pie to cool completely on a wire rack before slicing.
    • Serve as is or with a dollop of whipped cream or vanilla ice cream for an extra indulgence.

Notes

  • Make Ahead: The pie can be made a day ahead and stored in the refrigerator.
  • Crust Tip: To get a super flaky crust, make sure your butter is very cold and handle the dough as little as possible.
  • Nuts: Optional, but chopped pecans or walnuts add a great texture and flavor to the pie.
