Instructions

  1. Preheat oven to 375°F and lightly grease a medium baking dish.
  2. Cook penne pasta until slightly firm, drain, and set aside.
  3. Season chicken thighs with salt, pepper, and Italian seasoning.
  4. Heat olive oil and butter in a large skillet over medium heat.
  5. Sear chicken until golden on both sides, then remove from skillet.
  6. Add mushrooms to the same skillet and cook until browned and fragrant.
  7. Stir in minced garlic and cook for 1 minute.
  8. Pour in chicken broth and heavy cream, stirring gently.
  9. Add grated asiago cheese and stir until melted and smooth.
  10. Add cooked pasta and mushrooms to the sauce mixture.
  11. Transfer everything into the prepared baking dish and nestle chicken pieces on top.
  12. Bake uncovered for 25 to 30 minutes until bubbling and lightly golden.
  13. Sprinkle fresh thyme over the casserole before serving.
