Instructions
- Preheat oven to 375°F and lightly grease a medium baking dish.
- Cook penne pasta until slightly firm, drain, and set aside.
- Season chicken thighs with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium heat.
- Sear chicken until golden on both sides, then remove from skillet.
- Add mushrooms to the same skillet and cook until browned and fragrant.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and heavy cream, stirring gently.
- Add grated asiago cheese and stir until melted and smooth.
- Add cooked pasta and mushrooms to the sauce mixture.
- Transfer everything into the prepared baking dish and nestle chicken pieces on top.
- Bake uncovered for 25 to 30 minutes until bubbling and lightly golden.
- Sprinkle fresh thyme over the casserole before serving.
