- 2 skinless salmon fillets, about 6 ounces each, cut into chunks
- 12 ounces fettuccine pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 1/2 cups heavy cream
- 1 cup freshly grated parmesan cheese
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil and heat a large skillet over medium-high heat.
- Season the salmon pieces with salt, pepper, and Italian seasoning.
- Add olive oil to the skillet and sear the salmon for 3 to 4 minutes per side until golden. Remove and set aside.
- Cook the fettuccine according to package directions until al dente.
- In the same skillet, sauté garlic for 30 seconds. Add cherry tomatoes and spinach and cook until softened.
- Pour in chicken broth and heavy cream. Stir well and bring to a gentle simmer.
- Gradually stir in parmesan cheese until melted and creamy.
- Add the cooked pasta to the skillet and toss to coat evenly.
- Gently fold the salmon back into the sauce and simmer for 2 minutes.
- Top with chopped parsley and serve immediately.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Reserve some pasta water to loosen the sauce if needed.
- Do not overcook the salmon to keep it tender and flaky.
- Add red pepper flakes for a spicy variation.
