Creamy Tuscan Salmon Pasta

  • 2 skinless salmon fillets, about 6 ounces each, cut into chunks
  • 12 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and heat a large skillet over medium-high heat.
  2. Season the salmon pieces with salt, pepper, and Italian seasoning.
  3. Add olive oil to the skillet and sear the salmon for 3 to 4 minutes per side until golden. Remove and set aside.
  4. Cook the fettuccine according to package directions until al dente.
  5. In the same skillet, sauté garlic for 30 seconds. Add cherry tomatoes and spinach and cook until softened.
  6. Pour in chicken broth and heavy cream. Stir well and bring to a gentle simmer.
  7. Gradually stir in parmesan cheese until melted and creamy.
  8. Add the cooked pasta to the skillet and toss to coat evenly.
  9. Gently fold the salmon back into the sauce and simmer for 2 minutes.
  10. Top with chopped parsley and serve immediately.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Reserve some pasta water to loosen the sauce if needed.
  • Do not overcook the salmon to keep it tender and flaky.
  • Add red pepper flakes for a spicy variation.
